On a Charles Faram hop academy visit, Rhys from BeerRiff says: "making a beer with the Olicana T45 pellets would be fun". He wasn't wrong!
Admiral is here for bittering and a little lemoniness, but the Olicana is doing the heavy flavour and aroma work, pushing guava especially, along with some orange and other tropical fruit notes.
Used a technique called "dip hopping" here - extracting oils from the Olicana hops in the fermenter before the yeast goes in and has fun doing some biotransformation during fermentation. Then it gets dry-hopped with the same amount when fermentation is complete.
This is the third batch of this recipe with a key modification. In the first two batches WHC's Saturated yeast did a great job. But for this batch, their Mango Madness thermotolerant strain got busy at over 30c 😮

of Jester® and a daughter of Cascade. Olicana® is also
available processed as a T45 pellet.
The delicate fruity aromatics of Olicana® are most
apparent when used as a dry hop or in lighter bodied
beers. The T45 pellets provide a greater concentration of
it's flavour characteristics allowing it to shine in more
robust brews.
